Picturesque Jalisco, Mexico and some surrounding areas is the appellation of origin for all genuine tequilas.

The production of (genuine) tequila is tightly regulated as tequila has appelation of origin status. This status defines the geographic indication, the specific places or regions where the product has to be made, and sets specific standards for producers in terms of how a product is grown or produced. The tequilas now available at vomFASS surpass even these standards.

As with any great breakthrough product, the journey is as fascinating as the end result.

Nestled in the heart of Jalisco, Mexico, there is a charming village of less than 100 people.  Bucolic and peaceful, the village is renowned for its waters and, more recently, the extraordinary blue agave, Tequilina Weber. used to make tequila. It all began with a land inheritance and the promise to make the land productive.  Countless crops were researched before the decision to grow agave was reached.  Although agave had not been grown in this area of Jalisco before, soil tests indicated that, using an organic protocol, it could be done.  With careful adherence to the advice of elders, “Take care of the earth and she will take care of you,” a combination of modern science and traditional agricultural methods changed and improved the small town and surrounding areas forever.

The first crop of these organic blue Tequilana Weber agaves were harvested in Jalisco in 1993 and were some of the healthiest agaves many tequila experts had ever seen. The organic protocol produced agaves that exceeded the average weight and sugar content of normal crops, and agave buyers from all around Mexico traveled to see them. It was realized at this point that this organic protocol was truly innovative and could help other grows produce high quality crops in an environmentally-friendly way.

Subsequently, hundreds of farmers across Mexico have been trained with the organic methods to promote sustainable agriculture. This is part of the family’s mission: to positively impact the environment as well as the health of the farm workers and consumers.  From avocado growers to strawberry farmers, these methods have helped hundreds produce higher quality fruits and vegetables to provide for their families and communities, increased the value of the land and created jobs in small towns that once had minimal employment opportunities.

Starting with such high quality agave allowed the creation of an organic protocol for production that is pure and true to the tradition of creating authentic tequila.  These tequilas were created to honor a family legacy and demonstrate that a high quality product could be produced with environmentally-friendly, sustainable methods. Without the use of toxic pesticides, fertilizers, herbicides, fungicides, or any other artificial substances, the plants are healthier and able to withstand even the harshest weather conditions.

Each of these tequilas is made from 100% USDA certified organic blue agave Tequilina Weber.  Here are short descriptors for the new vomFASS tequilas:

Tequila Blanco

This unaged tequila is bottled immediately after distillation, making it amongst the purest examples of tequila in the world.  Tequila Blanco comes with a powerful bouquet of freshly picked pears and black pepper on the nose.  The palate is surprisingly subdued and complex offering hints of freshly cut citrus and wildflowers.  The finish is crisp and refreshing making this the perfect cocktail libation.

Tequila Reposado

Gently aged for 6 months in white oak barrels, this single estate tequila is a near perfect example of a Reposado. Made in small batches, this tequila is equally suited to being enjoyed neat or in your favorite specialty drink.  On the nose the fruity notes of the agave marry the light oak and almond undertones, while the palate is dominated by a more pronounced vanilla and caramel influence.  The finish is both complex and refreshingly jammy.

Tequila Añejo

Aged for just under 3 years in white oak barrels this single estate Tequila Añejo is a perfect example of the level of attention to detail and the strict standards of excellence that went into its production.  The nose carries heavy notes of vanilla and caramel while the palate exudes sweet, spicy wisps of the base agave nectar.  The finish is complex with subtle hints of tasted cashews and burned sugar behind a creamy mouth feel.

Tequila Extra Añejo

This single estate Tequila Extra Añejo has been aged for at least 6 years in white oak barrels lending the spirit an incomparable golden hue, an unrivaled complexity and an unmatched smoothness.  Made in small batches from top quality organic blue agave, this tequila drinks like a fine cognac with a thick, viscous body to match.  The nose offers a delightful mix of peach cobbler and cashews while the palate highlights the notes of baked green apples and cinnamon dusted crème brûlée.  The finish is long and complex, a cacophony of baking spices and spicy Mexican dark chocolate.

  1. Wet rim of maragrita glass with lime slice
  2. Dip glass in vomFASS chili salt
  3. In shaker, mix 2 parts vomFASS Orangecello with 1 part vomFASS Tequila Reposada with ice.
  4. Enjoy on the rocks or strain into salt rimmed glass
