Sustainably Green franchise

Sustainability is a very hot topic these days, but what exactly does it mean?  From an environmental science perspective, it is the quality of not being harmful to the environment or depleting natural resources, thereby supporting long-term ecological balance.  vomFASS has taken the philosophy of sustainability to heart.  With a view of nature as the ultimate raw material supplier, vomFASS chooses to handle agricultural resources responsibly and works to maximize sustainability in all areas within their concept.

The company headquarters of this epicurean franchise in Waldburg, Germany is designed to operate in an even energy balance through the use of solar power.  Throughout the course of one year, the building produces at least as much energy as it consumes. sustainable

vomFASS has espoused reuse of their bottles from the start of the franchise, over 20 years ago and customers have overwhelmingly adopted this environmentally sound practice. Washing, drying and bringing the vomFASS oil and vinegar bottles back to the store for refilling requires a small extra effort by customers, but reaps both environmental and economic benefits.

Reuse of vomFASS bottles is the ideal eco-friendly approach to a sustainable environment.  Whereas recycling is impactful, reuse is preferable.  Recycling breaks down an item into raw materials which requires energy in both the recycle process as well as that required to make it useful again.  vomFASS recognized 20 years ago that reusable bottles were the key to reducing their environmental footprint.

There are several important advantages of reuse over recycling.  Replacing one reusable bottle reduces the number of bottles that need to be manufactured.  There are considerable reductions in disposal needs and costs.  Businesses and consumers benefit economically by the reuse of bottles.  Recycling is the attempt to clean up our mistakes…..reuse avoids them in the first place!

Additionally, the artisanal producers of vomFASS Grappa have taken another step in the sustainable direction.  These producers are now converting the organic remains from their processes into bio-fuel.

Packing and shipping materials have also been engineered to be recycleable to the highest percentage possible.

vomFASS is green and sees all of these steps as their ecological responsibility and takes their part in the sustainable supply chain very seriously.

Sautéed Green Tomato Medley

Late harvest tomatoes are often still green, but that doesn’t mean they’re not as tasty as their summer cousins.  Here’s a tantalizing recipe to showcase these seasonal late-bloomers.




  1. In a large saucepan, heat the vomFASS Garlic Herb Oil. Sauté the tomatoes and garlic over moderate heat, stirring occasionally, until golden brown, about 5 minutes
  2. Add blanched almond meal, stir gently to combine. Continue cooking for 2 minutes
  3. Season to taste with salt and pepper.  Drizzle with Maletti to serve.
