If you prefer the charm and tradition of handmade gifts, these biscotti are a perfect option. vomFASS Almond Oil is the unexpected, yet totally delicious addition to this traditional Italian cookie.
Cranberry Biscotti
Ingredients:
- ¼ cup vomFASS Almond Oil
- ¾ cup Sugar
- 2 teaspoons Vanilla Extract
- 2 Eggs, room temperature
- 1 ¾ cup All Purpose Flour
- ¼ teaspoon vomFASS Salt
- 1 teaspoon Baking Powder
- ½ cup Dried Cranberries
- 1 ½ cups Pistachio Nuts (1lb. if in the shells)
Directions:
- Preheat oven to 300º.
- In a large bowl mix oil & sugar until well blended. Mix in vanilla then beat in the eggs. In another large bowl, combine flour, salt & baking powder; gradually stir into egg mixture. Mix cranberries and nuts in by hand.
- Line the sheet pan with parchment paper & turn dough onto pan; form into one log, 12″ long by about 5-6″ wide and 2-3″ high. Dough will be very sticky; wet hands with cool water to handle dough more easily.
- Bake for 35-45 minutes in the preheated oven, or until logs are light brown. Remove from oven and set aside to cool for at least 10 minutes. Reduce oven heat to 275º.
- Cut log on the diagonal into 3/4″ thick slices. Lay on sides on a fresh parchment covered sheet pan. Bake approximately 8-10 minutes, or until dry; cool.
