Distilling has a long and distinguished history in Scotland. The earliest documented record of distillation dates back to 1494. This historic event was recorded in the tax records of the day. This entry states “Eight bolls of malt to Friar John Cor wherewith to make aqua vitae” (Latin for water of life). This amount was sufficient to produce almost 1,500 bottles.

Originally scotch was clear and frequently flavored with fruit and herbs. Consumption was generally very soon after distillation, or presumably as long as the maker could wait. However, once the use of oak casks, which produced smoother and more flavorful whisky, was commonplace, aging became an important step in the production of uisge beatha –(Scottish for water of life). Finally, in the 1920’s, a three year, oak cask aging on Scottish soil became a mandatory requirement for whisky producers. Traditionally, whiskies made in Scotland are spelled with the “e.”

Building on this historic base, two styles of Scotch whisky have evolved. Blended Scotches, which are a combination of 50 to 80 percent grain (unmalted) whisky and 20 to 50 percent malt whisky. Single-malt Scotches, which are made exclusively from malt, are produced by one distillery and have a richer smoky flavor.

“Two Casks” consists of two hand selected single malt Scotch Whiskies that are blended lovingly for vomFASS. These “Two Casks” complement one another perfectly and result in a unique, individual and outstanding Scotch malt whisky experience. This first component is from the Speyburn distillery and the second hails from the famous Caol Ila distillery.

The unique quality that emerges from blending Scotches is the combination of flavors that is contributed from each single malt, allowing each blend to surpass its “parents” in complexity, thus elevating the tasting experience. Each batch is handcrafted and overseen by Scotch legend, Stewart Laing.
