Getting to Know Chef Kevin Appleton


Kevin Appleton, vomFASS’ very own celebrity chef, brings his boundless enthusiasm and wealth of international cooking experience to everything he does. During his impressive career, Chef Kevin has received rave reviews for his cooking classes and awards and honors from his peers. As a new season of vomFASS cooking classes are about to begin, it’s time to get to know more about Chef Kevin.

Born in Minneapolis, Chef Kevin, son of a Chinese specialist and college professor, was soon on the move. First the family moved to Michigan, followed by Taiwan, back to Michigan and on to Hawaii, and back again to Michigan. Once out of college (Oakland University, Michigan with a B.A. in English no less!), Kevin moved to Chicago, where he pursued his passion for cooking by completing courses at the French Pastry School and the Cooking & Hospitality Institute/Cordon Bleu. Now married, it was off to Australia when Kevin’s wife, a music librarian, accepted a 6-month job exchange offer. While in Australia, Kevin was a prep cook at Percy’s BYO and ultimately garde manger at Yolan’s Brasserie, both in Melbourne. When the job exchange expired, the Appleton’s returned to Chicago.

The years in Chicago were very important as Chef Kevin worked in some of the finest restaurants in the area. These restaurants include: Café Provençal, garde manger; Va Pensiero; pastry chef; Salvatore’s Restaurant, line cook; Richie’s on Elston, sous chef and Rhapsody Restaurant, pastry chef. For several years after, Chef Kevin had a very successful catering business.

Chef Kevin was then the first hired to start up the new culinary arts program at the Institute of Culinary Arts, Robert Morris College in Chicago, where he was the Executive Chef. He held this prestigious position for four years. At this point, Chef Kevin’s talented wife was offered a position at the University of Wisconsin, Madison.

Once in Madison, Chef Kevin began teaching at the Madison College culinary arts program, where he has won the prestigious “Golden Apple” teaching award and is, of course, the celebrated chef for vomFASS. His cooking and recipes have won multiple awards for vomFASS at the “Taste of Madison” and he is a popular attraction at the Westside Community Farmer’s Market where he does live demonstrations with vomFASS ingredients and whatever comes in that day at the market. The Chef believes strongly in vomFASS products and incorporates them in his recipes for their spectacular flavors and values them for their compatibility with a healthful diet.

Game On

We’ll turn your wild-caught food into delicious family favorites and amazing culinary creations! Chili-rubbed venison or elk with berry and port reductions, roast pheasant with Calvados, caramelized apple and roasted root vegetables, plus learn Chef Kevin’s special technique for roasted garlic mashed potatoes.

Simple Recipes to Impress

Chef Kevin will teach you to create and prepare a menu to remember. Make your very own lamb chops persillade, polenta and chocolate lava cakes. You won’t believe how easy it can be. Bring a friend!

Cooking with French Spirits

Create a sumptuous three course French dinner with Chef Kevin. Brandied flammenkeuche (Alsatian onion tart), noisettes of pork with caramelized pears and Calvados cream sauce, vanilla ice cream with Armagnac soaked fruit and hazelnut, Poire William chocolate ganache.

Duck Two Ways

Chef Kevin will teach you the secrets of delicious duck. Smoked and seared duck breast over greens and braised duck legs accompanied by barley risotto with mushrooms, thyme and sweet potato shortcakes.
