The United States is the most important market for wine today and in the foreseeable future. After passing the French and Italians for largest total wine consumption in 2011, according to Impact Databank, Americans consumed 324 million cases of wine in 2012. That’s a 7.7 percent increase over five years ago. And that number is only expected to grow in the next five years. What’s more, 2012 is the first year America was home to 100 million wine drinkers, according to a Wine Market Council (WMC) study. ‘One hundred million wine drinkers cannot be ignored,’ said WMC president John Gillespie, at a presentation of the findings in January.”  Wine Spectator, in an article called ‘Forecasting wine’s future’ by Ben O’Donnell

Wine is a natural companion to the gourmet selections of oils, vinegars, liqueurs and spirits offered by vomFASS.  Although a relatively small percentage, 8-10% of overall sales at vomFASS, wine’s importance should not be overlooked. The question becomes, what wines to offer such a discerning clientele?  To answer that question, we spoke with Louis Conti, wine lover and owner of the Scottsdale vomFASS.

Toni Jakovec:  Hello Louis, thanks for talking to us today.  I understand you have a very successful wine department at your Scottsdale store.  Who chooses the wines?

Louis Conti:  Actually, I do the wine selection.

TJ:  How did you find your wine distributor?

LC:  I’m a dentist and my local wine distributor was a patient of mine.

TJ:  Well, that was convenient.  Is he the only distributor you work with?

LC:  I probably get 90+ percentage of my wine from him.

TJ:  How do you display your wine?

 LC:  We have the standard vomFASS wine rack.  Although it’s in the back of the store, it is clearly seen from front door.  It has a fairly large display with a table in front where we offer our wine tastings.  It has a very nice look to it and is a very inviting area.

TJ:  What type of wine promotions does your store do?

LC:  We’ve done multiple things in addition to our weekly Thursday evening wine tasting.  Each Thursday we open a couple reds and a couple whites with a varying weekly theme.  We have the wine rep, who acts as our sommelier, conducts the tasting.  He pours, talks about the wines and educates our customers.

TJ:  That’s terrific.

LC:  Yes.  We have a very loyal following since we started it in October.  We always have a few regulars plus some that stop by once a month or so and of course there are always a sprinkling of new customers in the group.

TJ:  Is this event free?

LC:  It is, however, we are considering charging a nominal fee of say $5 to cover the very basic expenses.

TJ:  Do you offer food at these tastings?

LC:  Yes I we usually offer some appetizers featuring vomFASS products.

TJ:  How are the wine sales at your Scottsdale store?

LC:  We’re a little above the average.  I’m sure that’s because of our location.  We are the only wine shop in this immediate area, plus our continuing marketing program has been very successful and we keep our wine at very competitive prices.

TJ:  Do you have a favorite wine?

LC:  Since I’m lucky enough to be choosing the wines, they’re all my favorites.  But, I do tend to change my wine preferences season to season.  For example, in the summer I drink crisp and light white wines and in the winter I go for heavy reds.  Of course, it always depends on what I’m cooking and what pairs well.

Just five or six ingredients and a few minutes of your time will spice up your love life and show your valentine how much you care.

Chocolate Truffles with Fig Chili

Heat up some romance
with v❤mFASS


  • 10 ounces dark chocolate, chopped
  • 2/3 cup heavy cream
  • 5 T unsalted butter
  • ¼ cup vomFASS Fig Chili Vinegar
  • ½ cup cocoa powder
  • ½ cup Red Hots, finely crushed (optional)


  1. Chop the chocolate into tiny pieces and place in a large glass bowl.
  2. Heat the cream and butter in a small saucepan over medium-low heat, just to simmering. Pour hot mixture over the chocolate and whisk until chocolate is completely melted. Gradually stir in vomFASS Fig Chili Vinegar, until completely incorporated. Refrigerate at least 2 hours.
  3. Using small scoop or melon baller, make chocolate balls and place on parchment paper lined baking sheet. Refrigerate for 45 minutes.
  4. Place cocoa powder (or finely crushed Red Hots) on a plate. Roll each chocolate ball in the powder, shaping gently into rounds in your palms. Add powder if they get too sticky.
  5. Truffles may be refrigerated in an airtight container, but bring up to room temperature before serving.
