Calvados Normandy Chicken

The Normandy region of France is renowned for their outstanding apples and important dairy industry. Out of this beautiful bucolic area comes one of France’s most famous dishes, combining apples, chicken, cream and Calvados.



  1. Salt & Pepper chicken thighs.
  2. In a large Dutch oven heat the olive oil over medium heat.
  3. Sauté chicken thighs until golden on each side; about 5-7 minutes per side. Remove thighs to plate and set aside.
  4. Sauté leek until soft over low heat; about 5 minutes.
  5. Add garlic; stir and cook about 1 minutes.
  6. Deglaze pan with Calvados. Add apple cider.
  7. Return chicken to pan, sprinkle with thyme and cook over low heat for another 10 minutes.
  8. Stir in mushrooms and cook another 10-15 minutes. Chicken should register 140 on instant thermometer. Stir occasionally.
  9. Stir in cream and season to taste with salt & pepper. Cook another 5 minutes until thickened.
  10. Add parsley; stir.
  11. Adjust seasoning & serve.
