Aioli–a vomFASS Gourmet Revolution

 

Thinking outside the culinary box is where many successful vomFASS franchisees and their staff memebers excel.  Offering a worldwide selection of oils, vinegars, liqueurs and spirits is not enough for this enterprising company of foodies – they also want to offer their customers exciting and innovative uses for their gourmet foods and unique product line.

In a departure from our usual newsletter, this week we will offer an opportunity to think about our products as a jumping off place to personalize a time honored recipe, such as aioli.

Aioli has become the new mayonnaise.  A velvety emulsion of garlic, egg and oil, this Mediterranean staple is now showing up with amazing regularity in American homes and restaurants.  By creative and judicious use of vomFASS’ infused extra virgin olive oils, we have developed some excellent variations on the aioli theme.  Below you will find five different approaches to aioli, from a dipping sauce to a condiment to pasta.

The key to maximizing your vomFASS collection is to unleash your imagination.  To that end we offer these four aioli ideas, ready for you to use as is or modify to suit your tastes.  Look, taste and enjoy….

 

We’ll start with this basic aioli.  It is a fabulous accompaniment to roasted vegetables or crudités for a party.

Basic Aioli

Ingredients:

Directions:

  1. Whisk together egg yolk, garlic, lemon juice and mustard in a small bowl.
  2. Slowly, a few drops at a time, whisk vomFASS Don Carlos into egg mixture.  Whisking constantly until oil is completely incorporated and mixture is emulsified.
  3. Salt and pepper to taste.

 

By substituting vomFASS Extra Virgin Lemon Olive Oil, we reduced the fresh lemon juice in the basic recipe and added chopped dill as an added flavor profile for the salmon.

Lemon Dill Aioli

  1. Whisk together egg yolk, lemon juice, dill and mustard in a small bowl.
  2. Slowly, a few drops at a time, whisk vomFASS Lemon Oil into egg mixture.  Whisking constantly until oil is completely incorporated and mixture is emulsified.
  3. Salt and pepper to taste.

 

No need to bring out that tired mayonnaise when you can spruce up a hamburger with homemade garlic aioli.  Here we left the crushed garlic out of the basic recipe to open it up to vomFASS Extra Virgin Garlic Olive Oil.  Surprise your guests with this savory condiment.

This recipe started out as a way to kick up an aioli shrimp dipping sauce by substituting vomFASS Extra Virgin Red Pepper Olive Oil.  Once we made this spicy version, we knew it would be the perfect pasta sauce.  Let your imagination be your guide.

Red Pepper Aioli

Ingredients:

  • 1 large egg yolk
  • 2 cloves garlic, minced & mashed
  • ½ t fresh lemon juice (plus extra for pasta recipe)
  • ½ t Dijon mustard
  • ¼ c vomFASS Extra Virgin Red Pepper Olive Oil
  • Pinch of red pepper flakes
  • Salt & Pepper to taste

Directions:

  1. Whisk together egg yolk, garlic, lemon juice and mustard in a small bowl.
  2. Slowly, a few drops at a time, whisk vomFASS Extra Virgin Red Pepper Olive Oil into egg mixture.  Whisking constantly until oil is completely incorporated and mixture is emulsified.
  3. Add red pepper flakes, salt and pepper to taste.
    Added pasta preparation step:  Sprinkle with lemon juice over pasta to taste.
