Here are some statistics compiled by CNN.com.  Current population minorities are expected to become the majority by 2042.  By 2023, minority children are expected to make up a majority of the population of children. By 2050, it is projected that minorities will make up 54 percent of the population as a whole. The group expected to grow fastest is the Hispanic population, followed by the African-American population.  In total, these minority populations collectively are projected to make up 45 percent of the population as opposed to only 29 percent in 2008. The Asian-American population is expected to account for 9.2 percent of the population in 2050.

From Toni’s Kitchen: Scallops with Grapefruit-Orange Drizzle

This recipe is an adaptation of Liliana’s Restaurant chef, Dave Heide, who recently amazed vomFASS Experience Day visitors Mike Aldridge, Nidal and Melinda Estiban at a specially prepared dinner.  It is a scrumptious example of how to showcase the new vomFASS Grapefruit Oil and Orange Vinegar.

Scallops with Grapefruit-Orange Drizzle

Ingredients:

  • 6 Ocean Scallops
  • 1 T. vomFASS Peanut Oil
  • 1 T. Butter

vomFASS Salt & Pepper

  • 1 T. vomFASS Grapefruit Oil
  • 2 t. vomFASS Orange Balsamic Vinegar

Preparation:

  1. In a heavy bottom skillet, heat vomFASS Peanut Oil and Butter. Season scallops lightly on both sides with vomFASS Salt and Pepper.  Sear scallops on both sides for approximately 2 minutes per side.
  1. In a small bowl, combine vomFASS Grapefruit Oil and vomFASS Orange Vinegar into a smooth emulsion.
  1. Plate cooked scallops and drizzle with emulsion.
